What you need

  • 4 Chicken Drumsticks, skin off
    ¼ cup flour
  • 1 tsp Smoked Paprika
    1 tsp Cumin
  • ½ tsp White Pepper
    1 can 4-bean mix
  • 2 tsp Dijon Mustard
    ¼ cup Balsamic Vinegar
  • 1 cup Parsley
    colander
  • cooking spray
    medium saucepan
  • baking tray
    zip lock bag
  • measuring spoon/cup

What to do

  • 1.

    Preheat oven to 180°C

  • 2.

    Place into zip-lock bag:

    • ¼ cup flour
    • 1 teaspoon Cumin
    • 1 teaspoon smoked paprika
    • ½ teaspoon white pepper
    • 4 chicken drumsticks

     

    Lightly shake bag to combine.

  • 3.

    Spray baking dish with oil and place coated chicken drumsticks in.

    • Bake for 40mins until chicken cooked through
  • 4.

    Heat a saucepan to medium.

  • 5.

    Drain and rinse 4-bean mix in a colander

  • 6.

    Add to pan:

    • 1 can 4-bean mix,
    • 2 teaspoon Dijon mustard
    • ¼ cup Balsamic Vinegar


    Cook until bubbling.

  • 7.

    Remove from the heat and stir through the parsley.

  • 8.

    Divide the bean casserole mixture between two plates.

    Top with chicken

    Serve with a side of vegetables.
