What you need(serves 2)

  • 1 tbsp Extra virgin olive oil
    1 onion, thinly sliced
  • 2 cloves of garlic, crushed
    1 red capsicum, thinly sliced
  • 2 cans of chopped tomatoes
    1⁄2 tsp cayenne pepper
  • 2 tbsp tomato paste
    1 tsp cumin
  • 1 tsp smoked paprika
    1 pinch brown sugar
  • 4 eggs
    1⁄2 cup chopped parsley
  • 2 slices bread (optional)

What to do

  • 1.

    Heat 1 tbsp of olive oil in a medium pan.

  • 2.

    Add 1 sliced onion and fry until soft.

  • 3.

    Add 2 cloves of crushed garlic and cook for a further minute.

  • 4.

    Add the sliced capsicum and cook for 5-7 minutes until soft.

  • 5.

    Add 2 cans of chopped tomatoes, spices and sugar to the pan and stir to combine.

  • 6.

    Bring to a simmer.

    • ½ teaspoon of cayenne pepper,
    • 1 teaspoon Cumin,
    • 1 teaspoon smoked paprika,
    • 1 pinch brown sugar
  • 7.

    Crack the eggs one at a time on top of the tomato mixture making sure to space them evenly around the pan.

  • 8.

    Cover the pan and allow to simmer for another 10 mins until the eggs are cooked to your liking.

  • 9.

    Top with parsley and serve with toast.
